Ordered this knife and it came well packed (necessary for a knife) and was delivered quickly. This is my first high level knife and it works great! It's sharp and I think the grantons do help vegetables slide off most of the time. Would recommend and will continue to use Paul's finest for my knives!

I am a leather worker so my tools should be extremely sharp. My new knives have 64 points on the Rockwell scale so sharpening them with regular sharpening stones is difficult and takes a lot of time. I sharpen knives professionally by hand but I do own the Edge Pro Professional that I use on certain knives. I decided to try the newish EP Diamond Matrix stones as I’ve heard great things. I picked up the 80 grit and 950 grit. I just finished several knives using 80, 400 (regular EP stone) and the 950 grit Diamond Matrix. It is exceptional, the resultant edge which took minutes to achieve is hair popping sharp. The feedback is very nice. If you are on the fence due to the cost and the fact that they are a little new then take the word of a man obsessed with sharpening and extremely picky about the products used to satisfy my customers. These stones are fantastic and the results will startle you. Go for it.

I’ve had this knife for over 3 years and it’s been my primary knife since the day I got it.

It’s exceptionally sharp and I’ve cut myself a few times because I wasn’t being properly cautious. Apart from regular honing, I never sharpened it once until a couple of months ago, when I gave it a quick clean up on a whetstone.

It was fairly pricy (for a cocky home cook) when I bought it, and the price has only crawled up since then, but I would still buy this knife in a heartbeat. This is a professional tool and in addition to performing great it’s also beautiful to look at.

This stone is excellent for sharpen my dull my western knives and gives a good kasume finish for knife thinning. It brings a good edge for general purpose cutting in the kitchen.

This is my inbetween stone from Naniwa Traditional 1000 and Shapton Pro 8000. Despite lack of feedback from the stone, I find light pressure and consistent angle while sharpening brings a polished and very sharp edge, I would recommend this high quality stone.

This is a must have as a platform to hold your whetstone. The built quality is very good, holds stones of many sizes, and the base is grippy enough i don't need to put a non-slip material on the bottom.

This stone is effective in flattening Shapton Pro and Naniwa Pro Stones. I also used the back side to thin one of my knives and flatten that with Atoma 140. I recommend this stone to care for your whetstones.
