After purchasing the Edge Pro Apex sharpening system and taking it out of the box I will admit that it looks very complicated and confusing. But then after watching the DVD and reading the instruction book, it was very simple to use. I quickly tried it out with some old 4 star Henckels knives which lost their edge many years ago; I was amazed that after a few minutes on the Edge Pro they were just as good as new if not better. It takes some getting use to with the different angles to use for different knives, but it will save money in the long run. I have roughly 20 knives in my collection from small paring knives to a 14" chef's knife, boning knives, and various serrated knives and the Edge Pro system can sharpen them all. No more going to knife sharpeners who charge by the inch. I would strongly recommend this system to anyone from professional chefs to home cooks. Paul suggested this new product for me and I was intimidated at first but now I am suggesting it to all my cooks in my kitchen and friends. Definitely a good product to have in your collection.

Effective, but expensive for what it is

Obviously these guys have done a lot of work over many years to refine this product. It works really well but takes practice and skill. I suspect the creators are now so good at using these systems they may have forgotten how tricky it can be to get used to holding a thin, flexible blade in place purely by hand, not with the dominant hand, etc. it’s tricky and takes practice. Don’t expect this to be a quick and easy way of getting sharp knives.

My biggest issue was the construction and quality relative to the price. We here in Canada get horribly gouged on price so obviously I ended up paying quite a lot more than those south of the border, but even taking this into account I think this costs WAY too much for what it is. I paid over $300 for this and it’s basically a piece of plastic with some rods attached and a few stones. For that much money I would expect it to be machined aluminum rather than injection moulded plastic from China.

Overall I wouldn’t recommend this product at this price.

Wives knives

So far so good. The Edge Pro made it so easy to keep the angle correct for sharpening (something I had trouble keeping consistent freehand). My wife is very picky about her knives. After the first knife I sharpened in approximately 15 minutes she was completely happy with the edge they have now. This is the cat's a** for sharpening kitchen knives with low 17 degree or less edges.

Personally I found this to be one of the easiest knife sharpening systems on the market. So far I resharpened kitchen knives, hunting knives and a bushcraft knife to a mirror razor sharp edge. I highly recommend the diamond matrix 2300 and 4000 stones for a polished edge. The retractable magnet is a huge asset for holding your knives in place while you change stones or adding water. I also recommend the Japanese Nagura dressing stone to keep your Edge Pro stones clean and level, it’s amazing how well this stone works, I wish I know about it sooner. The only thing I don’t care for is the apex bench mount and it’s a personal preference, I find it easier and more comfortable to change the position of the Edge Pro as I sharpen the opposite side of the blade.
