If you are a student or follower of Peter Nowlan on social media you will know that he is a popular and skilled full-time professional knife sharpener and knife sharpening teacher, based out of Halifax, Nova Scotia, Canada.
This is his recommended ultimate sharpening stone set, with everything you need to bring your knives to a screaming sharp edge. Later you can add to it or try different brands/grits, but these top-quality stones will let you sharpen just about any knife to a SUPER sharp edge with a fine finish, with minimal effort and frustration. Good quality stones, a good quality knife, and some practice will get you there!
Includes: Naniwa Professional 400 and 1000 grit stones, Naniwa Adjustable Universal Stone Holder, 140 grit Atoma diamond-coated plate (for lapping/flattening the stones), and the Naniwa Leather Strop.
Stones individually boxed, 21cmx7cm surface (8.25"x2.75"). 2cm thick.
Note: these "Professional" models are the "new" Chosera stones (the highest level made by Naniwa, and some of the finest in the world), and replace them (the Chosera have now been discontinued). The same world-famous quality, now with improved grit consistency for even faster cutting.
Do NOT soak them, and do NOT leave them soaking in water while you use other stones... in use, just splash more water on the stone as needed instead of prolonged and repeated soakings, otherwise hairline cracks can appear over time. Please note that cracks are not covered under warranty... for the most part if they do occur, you can for sure just keep using the stone as normal.
If you're not a regular user of your stones and only want them for occasional home use, you might want to consider the Naniwa Super Stones or Shapton Pro or Glass stones instead, as they are still very high quality but are more forgiving of the cycle of wet/dry and extreme temperature and humidity changes in our climate. The Pro Stones fare better with regular use and regular lapping to avoid potential problems with cracks forming.
