this was a bday present for our daughter. she used it the next day to trim a full beef tenderloin into steaks. it's the ideal knife to delicately cut silverskin off, but is adequate for doing the whole job. the only fillet knives i have experience with are handmade finnish ones i bought used. so i'm not sure what's good, but i know that Paul sells only quality stuff so i came here and picked one. she's very pleased with her new knife.

A really versatile knife, perfect for making chicken cutlets which we do often, does a fantastic job of removing skin from large salmon fillets too. Super sharp, treat it carefully when not in use and it will stay sharp for quite a while. A kitchen grade handle feels nice and is easy to care for. I would recommend this item without hesitation.
