I've got roughly 40 knives, Japanese and Western, and this 6.25" Victorinox Rosewood utility/petty knife is by far, the most frequently used knife in my kitchen. It's problem-free (zero chipping),,,easy to maintain a very sharp edge,,,comfortable to use for my spouses' tiny hands as well as my extra-large hand. I've now bought four of these knives,,, three of which I've given as gifts to my spouse and her two daughters, and they all love the size. When it comes down to performance/value, this knife can't be beat. I bought my first one over three years ago, and have yet to require sharpening on waterstones. I generally give it a quick touch-up with a good quality steel, and/or the Idahone "fine" ceramic honing rod, and it breezes through tomatoes. Perfect sandwich knife. I've since ordered roughly a half-dozen more Vic's to add to my collection; ranging from 3.25" paring,,, to 10" chef's knives.Paul's prices on these Vic's are great, and shipping is always so fast. Highly recommended.
