Couteau à désosser rigide Victorinox Swiss Army Fibrox 6" - 40511

Unable to look at the knives locally, I bought this knife and the flexible version (40513) hoping to find the right solution for trimming brisket. I was worried the flexible blade may be flimsy like some filet knives but it turns out the flexible blade is perfect for me. This stiff version is sharp and appears to be quality but with the large blocky handle and narrow/thin blade with very little flex doesn’t suit my preference. Looking at the images I wouldn’t have guessed it would be this stiff in spite of the name! If you are looking for a very rigid blade for trimming meat this might be just the thing.

The quality of the product is impecable. I expected the knife to be much sharper in new condition.
