Seriously, stop reading reviews and buy this knife. Unless you're an exotic knife collector or a professional chef in a high-end restaurant, this is definitely the one you want. As with anything, there's a point of diminishing returns where each extra dollar starts getting you a lot less than one dollar of value. I would argue that the Victorinox Fibrox series hits that optimal value point for 99% of consumers. Sure, the handle is basic, but it's comfortable, durable and gets the job done. And yes, it may not be as sharp as carbon steel, but it holds an edge fantastically well and you'll never worry about rust or wince when someone drops it into the bottom of the sink.
All the extensive online reviews for this knife are spot on. Excellent bang for your buck if you're just looking for a workhorse knife you don't have to worry about in the kitchen. Comfortable, well designed and razor sharp out of the packaging. It will never be able to compete with a carbon steel knife for edge retention and sharpness, but for its price point it's a very solid addition to any kitchen.
Have to make note of the excellent service I experienced from PaulsFinest as well. Fantastic communication start to finish. I will shop again soon!
We purchased the three Victorinox knives (8" Chef, Bread, Paring) for our "mac & cheese" nephew on his recent 21st birthday. To be truthful, I am technically unassociated with all three, although I mainline the 10" Victorinox Chef knife exclusively. In fact, I have TWO, one in the fibrox, and the other in rosewood. (The first was gifted to me by a chef in gratitude on assisting him at a private
culinary event....since then, my $$ high-end chef knife has remained sleeping in a nearby drawer...)
Paul, I always enjoy doing business with you. Your descriptions are illuminating and purposeful....and your service is outstanding! With this recent order for our nephew, the parcel was delivered
THE NEXT DAY.....!! Well in time for his birthday! Many thanks!
