As a retired cabinet maker, chief cook in our house and an amateur knife maker, I really appreciate cutting tools that have a good edge. I used to use oil stones and water stones and they still have their place, but for ease of use nothing is like a diamond hone. No honing oils or pre soaking the stones in water, diamond stones just need a splash of water and away you go. When I am finished, a quick wipe with a rag to remove the swarf and the stones are ready for the next use.
The 600 grit is ideal for a good working edge on all knives and the 325 grit is perfect for restoring the edge after prolonged use. I use them with my chisels as well, the 325 to establish the bevel and the 600 for the micro bevel. I will say that for paring chisels 600 isn't fine enough, but for those with a steeper bevel, 600 is just fine.
The stand works very well. I was skeptical as to whether what I saw in the online image would be ridged enough and not slide around. I needn't have worried.
I am very pleased with this product and recommend it.
