NAN-SHARPENING-GUIDE-CLIP

Naniwa Sharpening Guide Clip

2 produits en stock

Just slide this on your knife to help keep a steady angle while sharpening your knife on a stone. The white strip is less abrasive than the cheap steel guides you sometimes see so you're less likely to scratch the stone (and the plastic is less likely to scratch the blade face). Note that the angle created will depend on the width of the knife blade... it will give you a nice Japanese angle with a santoku or most chef's knives, but the angle will be higher with a small blade like a paring knife, and very low with a super wide blade like a Chinese chef's knife. But it can still be very handy, especially when you're just starting out and want to concentrate on your technique without also having to worry all the time about maintaining a consistent angle.

Please note: we have received a report of the guide clip causing scratches on a blade, so if you plan on using the sharpening guide clip, please test it carefully and make sure it and the knife are very clean (no grit contamination!), to avoid potentially scratching the knife when putting it on and taking it off or moving it. We have sold many hundreds over the years and this is the first such complaint, but still, it's worth noting that when putting it on or removing it, it's best to avoid sliding it horizontally, again to guard against perhaps scratching the knife blade.

Great clip

This is my second one of these clips. I have tried several other brands and they simply do not perform as well. Yes, over time they might scratch your knife but you can avoid that by keeping it clean. My first clip only scratched when it was filled with slurry from the stones. I have used tape to protect my knives and this solved the problem but be warned on one of my knives the tape took off the black finish...that is a sign of the quality of the knife(not bought on this site). This is a good tool to get you use to the angle...over time I have used it less and less.

Meh..... angle depends on size of knife, check with a cube before you start out.
