The 9-inch Victorinox Swiss Army Fibrox Chef's/Carving Knife a great choice for someone who already has an 8" chef's knife and/or a santoku and who wants something a little bigger and more heavy-duty for those extra big jobs. A heavy-duty, affordable, and high performance knife. Also great for culinary school students who need something rugged and affordable. YES, this is the 9" version of the same 8" knife that is so highly recommended by Cook's Illustrated magazine! So why do they call it both a chef's knife AND a slicer? Well, it's basically a somewhat shallow chef knife (not even as deep as the 8"), and a somewhat deep slicer. It IS useful as a chef knife, but if you prefer a deeper knife (so your knuckles have more clearance), go for the 8" or 10". If you want to use this as a slicer, you'll probably be very pleased.
