An excellent all-around high quality steel. Ideal for use with all knive. This is my #1 pick for a high quality and affordable steel. Safe on even the modern fine edges like you'll see today's santoku knives. Restores and realigns the edge without grinding it away. Forget those tiny 8" steels that come in "sets" -- this serious 10" length is good for even a large chef's knife. Pull this baby out, give your knife a few swipes and just watch as your guests/co-workers tremble in anticipation at your superior knife and prep skills (just don't proceed to then cut into your finger please).
