    Naniwa Fine 220 Grit Japanese Flattening/Dressing Stone, Grooved, 30cm X 15cm X 2cm

    Over time, any sharpening stone will start to wear and the surface will become hollowed out somewhat, and so it will need to be flattened (also sometimes referred to dressing). This stone is made for this purpose. You can wet the surface and rub the stone gently over the top, taking off the high edges and making the stone flat again. You can also spread a small amount of silicon carbide "sand" (see below, under "related products") on the sharpening stone to help the grinding and smoothing. This is a very large and heavy stone so it's useful for even pretty large stones such as the Chosera, and includes rubber bumbers for the ends to help steady it while in use.

    Naniwa Aotoishi "Green Brick of Joy" 2K Grit Japanese Whetstone Sharpening Stone, NO Stand, 21cm x 7cm surface, 5.5cm thick. 

    This fine stone is a good choice for finishing off German knives, or for regular maintenance of any other German or Japanese knife where you don't necessarily want a super polished edge. This is the smoothest many people will ever need to use, especially for German knives or any knife made with standard stainless steel.

    This is a "non-series" stone, so it's not really a Super Stone, Pro, or whatever... it's very thick, and it just has a certain something to it that many serious knife sharpening experts love, hence the "Green Brick of Joy" nickname!

    A handy-dandy "rust eraser", which is kind of like a pencil eraser, but bigger, and more fibrous and abrasive (though it generally won't scratch, it's more fibrous in texture). These erasers are often used to clean stones and sharpening hones (it's similar to the Idahone Superaser, but harder and not quite as good for cleaning the Idahone fine ceramic hone in my experience).

    This semi-fine stone is used for prepping a final edge. This will smooth out the initially rough edge left by by a coarse stone or will return the burr for final finish with a finer stone.

    Note: This is the higher-end Traditional 1000-grit stone (T-211). If you see other stores listing a Traditional 1000-grit # T-210, that is a cheaper, lower-quality version which is less dense (it has less abrasive powder) and so cuts much more slowly. Naniwa considers the T-210 suitable for home use only, whereas this T-211 that we sell is suitable for professional use.

    This super coarse stone is perfect for very quickly grinding a new edge on your knife, and for working out nicks or cracks or other imperfections in old used/abused/damaged knives. Use this grade only when you regular maintenance and finishing isn't doing the trick anymore. It's very coarse and so will cut (remove metal) quite aggressively, so use care.
