They are resin-impregnated so they are very fine and smooth and do NOT require soaking -- just spray/wet and you're good to go. Very easy sharpening, and long-lasting. These stones are great for the pro or serious home use, as they do not have bases and are a full 2cm thick, so they' last for many, many years.

    Naniwa Fine 220 Grit Japanese Flattening/Dressing Stone, Grooved, 30cm X 15cm X 2cm

    Over time, any sharpening stone will start to wear and the surface will become hollowed out somewhat, and so it will need to be flattened (also sometimes referred to dressing). This stone is made for this purpose. You can wet the surface and rub the stone gently over the top, taking off the high edges and making the stone flat again. You can also spread a small amount of silicon carbide "sand" (see below, under "related products") on the sharpening stone to help the grinding and smoothing. This is a very large and heavy stone so it's useful for even pretty large stones such as the Chosera, and includes rubber bumbers for the ends to help steady it while in use.

    Naniwa "NEW Super Stone" Japanese Whetstone Sharpening Stone, double-sided combination: 1000/5000 grit, 21cmx7cm surface (8.25"x2.75"), 2cm total thickness.

    If you want a complete all-in-one sharpening stone solution without sacrificing quality and without breaking the bank, this is for you! You get two super high quality stones, 1cm thickness each, permanently bonded together (for strength and convenience). The 1000 is great for starting a new edge, or even for finishing/maintaining knife where you want a rougher edge (for more "micro serrations"), and the 5000 is there to finish off and polish an edge (great for Japanese knives for example) and for regular everyday maintenance of your knives (it's about the same fine grit as the fine ceramic hones I sell). I selected these grits after consulting with sharpening professionals and Japanese restaurant chefs to make sure you get the absolute best grits and stones for your knife collection. Once you're comfortable with sharpening technique, I'd recommend also adding a 400 grit stone -- they're inexpensive and you'll find it much quicker and easier to cut in a new edge... removing metal with the 400 grit stones is quite a bit quicker than with the 1000 grit! And if you want to finish off with a very polished edge (or if you're sharpening straight razors), you can add an 8,000, 10,000 or 12,000 grit stone for that final stropping.

    The ceramic compounds used to manufacture these is also of very high quality, and so they strike a great balance between ability to cut a nice edge without too much work and still being very long-lasting and strong. These are truly excellent sharpening stones, suitable for any serious hobbyist, pro, chef, wood-worker or outdoorsman. Note the nice large size too -- most other cheaper stones you'll see around shops or mail order in North America are smaller and so are more difficult to work with (and will wear out more quickly), especially with kitchen knives where it's nice to have the extra surface area when sharpening a santoku or chef's knife. Made in Japan.

    These stones are made by the Resin Bond method, which yields a higher quality stone than the old baked method used with cheaper stones, and it offers 90% of the performance of the MUCH more expensive and fragile Magnesia method stones. Also, a great benefit of this method is that the stones do NOT require soaking in water prior to use (in fact they should NOT be soaked). A quick spray or splash of water is all that is needed and you're ready to go.

    A handy-dandy "rust eraser", which is kind of like a pencil eraser, but bigger, and more fibrous and abrasive (though it generally won't scratch, it's more fibrous in texture). These erasers are often used to clean stones and sharpening hones (it's similar to the Idahone Superaser, but harder and not quite as good for cleaning the Idahone fine ceramic hone in my experience).

    Just slide this on your knife to help keep a steady angle while sharpening your knife on a stone. The white strip is less abrasive than the cheap steel guides you sometimes see so you're less likely to scratch the stone (and the plastic is less likely to scratch the blade face). Note that the angle created will depend on the width of the knife blade... it will give you a nice Japanese angle with a santoku or most chef's knives, but the angle will be higher with a small blade like a paring knife, and very low with a super wide blade like a Chinese chef's knife. But it can still be very handy, especially when you're just starting out and want to concentrate on your technique without also having to worry all the time about maintaining a consistent angle.

    This is a GREAT device to make it easy and less of a hassle to set up your sharpening job. Instead of the bucket and 2x4 piece of wood setup that a lot of people use (with damp rags to steady everything), just set your stone (with or without stone base/holder) on the bridge and adjust the width so it sets snugly across your sink, plug your sink and fill partially with clean cool water and you're ready to go.     This ultra-fine stone is used for giving a knife a final polished edge. It is one of the finest stones available anywhere. There are manufacturers which claim higher grits, but few can yield a mirror polish edge like these Naniwa Super Stones can. Recommended for final finish of fine Japanese stainless or carbon steel knives. Not necessarily recommended or needed for most German knives (though you could try with a fine slicer I suppose, I wouldn't really recommend this kind of edge for a German santoku or chef's knife since they generally hold up better with a slightly rougher and thicker final edge).     This super coarse stone is perfect for very quickly grinding a new edge on your knife, and for working out nicks or cracks or other imperfections in old used/abused/damaged knives. Use this grade only when you regular maintenance and finishing isn't doing the trick anymore. It's very coarse and so will cut (remove metal) quite aggressively, so use care. It is the coarsest New Super Stone Naniwa makes!

It's a good option for people who don't need the more polished edge of the 5000 or higher grit (and this one will work more quickly, and it's cheaper).     If you want a nice polished and fine edge (and that certainly does seem to be the trend these days, especially among Japanese knife owners), then the 5000 is a great choice to finish your knife edge. It's also quite a bit more fine than the 1000 that many people start with, so this way you can purchase just a 1000 and a 5000 and you'll be pretty much set for most regular knife care. These are excellent, very much high end stones, but are one step down from the top of the line Chosera (now rebranded "Professional Stones") which use a different bonding method for a somewhat nicer feel and faster cut, but at the expense of higher prices and more fragility. I use these Super Stone series at home and they're great.

    Naniwa Super Stone 800 Grit Japanese Whetstone Sharpening Stone, NO Stand, 21cm x 7cm surface, 2cm thick.

    This medium-fine stone is perfect for grinding a new edge on your knife, or for doing regular touch-up work when you don't need to remove much metal and so don't need to use a very coarse stone to start with. Note: these are the new (for 2015) "Sharpening Stone" series from Naniwa which replace the old "Super Stones". They have different packaging, but the stones themselves look and feel very, very similar, and are the same size as the old Super Stones.     These are great stones for pro or home use, as they are long lasting, forgiving, and not fragile or prone to cracking.

    An excellent super-fine stone for putting a highly polished edge on your edged tools, from knives to razors.

    Note: these are now branded "Super Stones"... again... in 2015 Naniwa re-branded them "Sharpening Stones" for the North American market, but I think they finally realized that didn't make sense so they're gone back to the better-known "Super Stone" name.
