Naniwa Professional Stones

These are widely considered to be the finest artificial whetstones available today. These new Pro Stones are the next generation of the highly-regarded Chosera stones, which they replace. They are made by the magnesia bonding method and so are very hard, very fine and smooth and do NOT require soaking -- just spray/splash and you're good to go. Very easy sharpening, very fast cutting, and long-lasting. They have a high ratio of abrasive material so they do indeed cut faster than many other stones. These stones are great for the pro or serious home use, as they do not have bases and are a full 2cm, so they'll be very long-lasting. As with the Super Stones, these are NOT attached to a base, as requested by most sharpening and cooking professionals... this way they are easier to store and carry, and you have more choice in your sharpening setup and you do need a base, you can purchase the steel/rubber base sold separately here which provides MUCH better support and stability.

One thing to keep in mind: the Chosera/Professional stones are more fragile than cheaper stones, so to keep them from cracking it's important to dry them slowly and naturally (do NOT use an oven or dryer or anything like that). And when wetting, use ROOM temperature water to avoid rapid and extreme temperature changes. Then when you're done just dry them with a towel, and set them aside to dry at room temperature. Also please do NOT soak these stones -- soaking may cause cracks to develop.

    Naniwa Fine 220 Grit Japanese Flattening/Dressing Stone, Grooved, 30cm X 15cm X 2cm

    Over time, any sharpening stone will start to wear and the surface will become hollowed out somewhat, and so it will need to be flattened (also sometimes referred to dressing).     A handy-dandy "rust eraser", which is kind of like a pencil eraser, but bigger, and more fibrous and abrasive (though it generally won't scratch, it's more fibrous in texture). These erasers are often used to clean stones and sharpening hones (it's similar to the Idahone Superaser, but harder and not quite as good for cleaning the Idahone fine ceramic hone in my experience).

    Just slide this on your knife to help keep a steady angle while sharpening your knife on a stone. The white strip is less abrasive than the cheap steel guides you sometimes see so you're less likely to scratch the stone (and the plastic is less likely to scratch the blade face). Note that the angle created will depend on the width of the knife blade... it will give you a nice Japanese angle with a santoku or most chef's knives, but the angle will be higher with a small blade like a paring knife, and very low with a super wide blade like a Chinese chef's knife. But it can still be very handy, especially when you're just starting out and want to concentrate on your technique without also having to worry all the time about maintaining a consistent angle.

    This is a GREAT device to make it easy and less of a hassle to set up your sharpening job.
