Chef Knives, up to 8"

The classic! When you like that good old rocking action for chopping, dicing and slicing, an 8" chef's knife is for you! 8" is the perfect size for most home users and many professional chefs and culinary students now also prefer an 8" (or a 210mm Japanese version). Unless you REALLY know you want/need the big iron, get one of these first and then later you can add a 240mm (9.5-10") or longer if you find you do need something bigger for leverage with big meats and veggies and such. Most people overestimate their need for a big knife in these days of smaller families and meats already broken down into small cuts at the butcher, so think hard about it...
