Chef Knives, over 8"

If you already have an 8" chef's knife or santoku and you need something larger, I'd recommend a 240mm Japanese (which works out to about 9.5") or a 10" German knife. These also make a great primary knife for professional chefs who know that a santoku or 8" chef's is too small for what they're doing. I also carry larger knives (up to 14") but in my opinion, for the most part these are not especially useful for the average cook, so think long and hard before you skip a 10"/240mm and go for something larger.
