So what makes the Microplane graters so amazingly sharp and spectacular at what they do? In a regular grater, the cutting edges are formed by punching holes into flat or curved stainless steel or tin. Grating anything firmer than cheddar cheese is a real chore, and even soft items gum up the holes.

Microplane graters' tiny razor-like edges are formed by a totally different process called photo-etching in which holes are dissolved with a chemical, leaving edges that finely slice the food instead of tearing or shredding. It's like using dozens of tiny razor blades to slice your food. Oh, and did I mention that these graters are also MUCH easier to clean than old-fashioned graters? Yep, because these are precision made of high quality stainless-steel and plastic, they simply wipe clean.

40000 Series
Developed for the woodshop... perfected for the kitchen. With patented cutting edges originally designed for shaving wood, the 40000 series Microplane graters are the original woodworking/kitchen tools. The graters are easy to use and dishwasher-safe. The blades are made from surgical grade stainless steel. These designs are favourites of the professional kitchen and pastry chef because they're easily carried in chef's bag/cases, and easy to stow in cramped kitchen spaces. The 40020 is by far the most popular I sell, and the one I carry myself in my professional pastry/baking toolkit.

35000 Series
No gimmicks here, just good design and performance. Nice wide blade, which some people prefer over the longer 4000 series. 38000 Series
Microplane calls these their "Professional" line. They're all stainless steel, and a bit heavier and more expensive than the 35000 which I prefer, but these two models below are only available in this series, so here they are! And they really are pretty cool models, since they're basically little razor blades (hence the name "shavers"!) This makes them superb for creating wide shavings or chocolate (yeah!), parmesan and other hard cheeses. They're very strong, and one nice little feature that is unique to this line that I particularly like is the downturned little rubber "bumper" on the end (top edge), so that when you set it down on and press against it to do the work, it tends to stay put a little better than some others with a hard plastic top edge.Grating Area: 5 1/4" x 2 1/4 "
