| NOTE: I am sold out of all Hattori knives and I do not know when (and if) they will be back in stock. Supply disruptions at the factory have meant that they are simply not able to produce sufficient quantity, and my customers have been transitioning to Misono over the past few years, so I haven't really pushed... in my opinion, and that of my serious home and professional chef users who have both knives, the Misono (especially the UX10 series) represent a superior value, with better and MUCH stronger edges -- the Misono knives do NOT have the cracking/chipping problem that has always plagued Hattori, which have tendency to be fragile and brittle.
