This is similar to the model 316 Asian 2-stage sharpener, except that the second stage has a stropping stage (like the final stage on the 3-stage models) for finishing/polishing and regular everyday touch-ups and edge maintenance. Both models will give excellent results, but I suppose it just comes down to the type of edge you prefer: the model 316 will probably give you a slightly rougher edge with great "bite" which can be excellent in an all-around knife like a santoku, but this model will give you a more polished edge (like on a Misono knife) which can give superb slicing performance for example, but which perhaps isn't quite so great on more sinewy and tough foods (root veggies, some meats, etc.). I think it's a somewhat subtle difference though -- both sharpeners will give you a VERY sharp and excellent knife.

Yes, you can also use this to re-set the edge of a German style knife with a 20-25 degree angle to a finer 15 degree Japanese style edge. With really old knives which use softer metals this can be a problem because the sharper edge will be weaker and so more prone to dulling quickly (and potentially getting damaged if misused), but with today's more modern German knives, I don't think it's a problem for the most part, and can result in a knife with a sharper, finer edge (especially nice for slicers and other naturally thinner blades).
