| A nice heavy and heavy duty cleaver. Now THIS is what you should use to chop bones, okay? NOT your nice sharp chef's knife! A good value, with plenty of length (6") and weight (460 grams) and a nice wide blade (4mm) to provide the strength needed to spit bones. A great size for home use where you just need it for occasional use (great for chicken for example) -- not too big to make it difficult to handle or store, and not too expensive. If you're doing serious beef work though I'd go for one of the longer/heavier models. |
