| Wusthof says: "Filleting delicate fish or preparing carpaccio - it's easier with this extra thin, flexible blade." One look at this blade and any fisherman will recognize the classic sportsman fish fillet knife shape. This is from Wusthof's Butcher series, so it's big, tough, has a strong and comfortable molded plastic handle/grip, and the blade is stamped, not forged (as is always the case with such knives). This is like a REALLY good version of the fillet knives you see sold at fishing tackle shops. It's plenty strong and perfect for a serious fisherman or someone prepping lots of fish, but it's not very pretty I guess; still, the price is right, and this is an excellent knife that will perform admirably!! |
