The Next Generation of manual mechanisms! A truly fantastic evolution of the superb classic Peugeot mechanism, featuring the same quality and operation, but in an easy-to-adjust turn-and-click adjust style. Just turn the bottom ring to adjust the grind! 6-levels for pepper, 3 for salt. This works REALLY, REALLY well... great for those of you who don't like fiddling with the top screw on the old-style manual mechanisms. Not only does it do away with the sometimes frustrating "loose top" syndrome of the manual mills (especially if you have it really loose to get a coarse grind), because the setting is independent of the top/bottom assembly, so you can get a reliable coarse grind much easier (and coarser) than you can with the manual models. If you like coarse ground pepper, or if you simply want something easy and reliable, then a U-Select mechanism is a great choice. Also note that the price difference between a U-Select model and an old-style model is now very small -- when they were first released they were quite a bit more expensive, but now it's hardly more than a few dollars per mill, so I'd say it's really worth it.
