The 10cm (4-inch) stainless steel blade is thin, sharp, just flexible enough to make paring and peeling jobs easy, and it's plenty strong (and affordable!). This is the kind of knife that you pick up over and over again for so many small and delicate/precise jobs where a full size chef's knife or santoku is just too big. I love it!
