Naniwa "New Super Stone" 1000 Grit Japanese Whetstone Sharpening Stone, NO Stand, 21cm x 7cm surface, 2cm thick. This fine stone is a good choice for finishing off German knives, or for regular maintenance of any other German or Japanese knife where you don't necessarily want a super polished edge. This is the smoothest many people will ever need to use, especially for German knives or any knife made with standard or soft steel. Note: these are the new (for 2015) "Sharpening Stone" series from Naniwa which replace the old "Super Stones". They have different packaging, but the stones themselves look and feel very, very similar, and are the same size as the old Super Stones. They are still very much high end stones, but are one step down from the top of the line Chosera (now rebranded "Professional Stones") which use a different bonding method for a somewhat nicer feel and faster cut, but at the expense of higher prices and more fragility. I use the SuperStone/Sharpening Stone series at home and they're great.
