This style of boning knife has a thicker blade, and is the traditional Japanese shape for a boning knife (triangular shape). Definitely gaining in popularity here... it's quite useful and versatile, with the shorter length and straighter blade edge. This is a seriously heavy-duty knife with a thick and extra-strong blade, and a very beefy larger-than-standard sized handle so you have a superb grip. Hence the apparently high price for what seems like a "small" blade... in your hand it does NOT seem small!! In beautiful silver and blue gift box.
Please note that this knife is sharpened almost entirely on the right side only, meaning it's only suitable for right-hand use.
Don't forget to pick up a ceramic honing rod (see below). Even the best knives need regular touch-up maintenance to keep the edge in tip-top shape!
