I have been buying the Misono knife line Paul has here because the prices for all of the knives is more than reasonable. To be truthful, I wasn't prepared for how wonderful these knives are to work with. The user pretty much directs the knife and because they are so sharp, they do most of the work. Although I am not a professional kitchen person, I can tell you the UX10 is clearly the best line and again, because the prices are so low, you can buy the best without groaning too loudly at all. What I was expecting was great customer service and as in the past, my expectation was met and passed. Emails are answered really fast and without exception you get both a direct answer, and some background to help you make sound buying decisions. As the saying goes, "You the man, Paul" High 5!
