8.3" Chef's Knife -- Ideal length for home or professional use! Affordable and yet very high quality. An excellent knife for the aspiring chef or serious home cook. Traditional Japanese characteristics, yet still easy to maintain and tough, long-wearing construction and strength.

The Misono 440 series knives were made with the working professional chef in mind. They feature a strong 440 steel with a higher than usual chrome content (16%). This yields a strong blade with great rust resistance, while still remaining easy to sharpen and maintain. The fit and finish of the handle is also excellent, and the blade finish is a notch above the Moly series, with a more highly polished blade, top edge, and a very precise edge. The box is also a more deluxe box, along the lines of the UX10 packaging. The handle features a rounded end, like a traditional European knife, and the handle length is slightly longer than the Moly (like the UX10) for superb balance and control. A true working professional's tool! Also great for home use too of course.

This is the Misono chef's knife shape, for everyday all-around use. Preferred by many serious home and professional cooks. Good heft for serious cutting, but still easy to handle. Top-quality blade and construction in a classic shape -- like a good old German or French professional knife, only better. Super choice for people who want a single all-purpose knife.
