Testimonials
"[...] I hate ordering anything from the USA for the same reasons that you mentioned. I applaud your efforts at creating a Canadian presence online. I personally look for a Canadian source first for all my online purchases. Your site has been added to my favourites as of today :) [...] I'm not one to hand out undeserved praise or critisism. I believe if someone deserves a pat on the back you should let them know and if they aren't up to snuff, bring that to their attention as well. Unfortunately, this holiday season I've been handing out more of the latter. You are the welcomed exception :) [...] I just wanted to let you know that you definitely delivered more than the goods, it's a pleasure doing business with you.

This makes a nice "third knife" (after a chef's knife or santoku and a smaller utility/paring/petty knife). The shape of this blade makes it a nice longer "utility" knife or a short slicer or sandwich knife. In short, it's a versatile size and shape and will surely get plenty of use in any home or pro kitchen. Unlike German utility knives, this one is in the Japanese tradition and so has no bolster, making it easier to sharpen and simply more useful (in my opinion). It's also lightweight, thin and very sharp.

And of course, one of the big features of this knife is the handle: it's made of a material called "micarta" which is not very common, and is normally only found on expensive high-end Japanese knives. It's a composite material made of a linen fabric in an epoxy resin. It makes for a very lightweight, strong, durable and comfortable handle that looks REALLY amazing.

Features:
- 15 degree precision edge.
- Closed bolster collar.
- Extra-wide chef's knife blade.
- High carbon, molybdenum vanadium steel.
- Satin finish blade.
- Linen textured resin handle.
- 58 rockwell hardness (hard for good edge retention, but not too hard to make it difficult to maintain and resharpen).
