Beautiful Japanese-style slicer (carving knife; "sujihiki") features a high performance VG10 Cobalt stainless steel cutting edge with a 32-layer damascus steel outer for strength, durability and of course incredible good looks. Natural quince wood handle is beautiful and buffed to a lustrous finish. Handle has a classic shape for comfort and excellent balance.
This 225mm/8.9" size is long enough to be a serious slicer for good sized meats or veggies and fruit, but not too long for regular home use.
The edge is expertly finished and very sharp, and it will be easy to maintain and will be suitable for right or left hand use. The edges do appear to have a slight right-side bias in the sharpening, but it's so slight that I would still characterize these as mostly 50/50 and the difference should not be noticeable in any way if used in the left hand. And when sharpening you may choose to either sharpen 50/50 or to give it any profile you choose.
A really beautiful slicer that would be at home in any home or professional situation.
