I first heard of Misono products from a colleague who is a world class ice carver. The level of craftsmanship and quality of their steel is excellent. I later came upon a shop overseas that carried their line of knives and was again impressed by the workmanship and quality of their products. Upon my return, I was pleasantly surprised to find you offering an extensive selection of Misono knives right here in Canada. I am very pleased with my initial purchase of the 270mm UX-10 sujihiki. Its ease of use, feel and quality make this my favourite. I have subsequently purchased several Misono knives from you [UX10 & Molybdenum series] and continue to be impressed by their quality and feel. Not for novices. I recommend these knives to all professional Chefs who are looking for a new favourite. You know who you are and what I mean. You will not be disappointed.

HIROMOTO AS Knives


Hiromoto Knife CanadaHiromoto "Aogami Super" Tenmi-Jyuraku series Japanese knives. Precision forged with a Hitachi Aogami Super AS CARBON steel core, then clad with a 405 stainless steel. The core is composed of high carbon steel (1.40 - 1.50) with chromium (0.30 – 0.50) and tungsten (2.00 – 2.50) added for edge retention and durability. With a hardness of Rockwell 60-62 these blades can take a razor sharp edge and keep it longer than would a stainless steel knife.This gives these knives the unsurpassed superb and long-lasting cutting edge that carbon steel provides, but with little of the rust and discoloration problems that solid-carbon knives can exhibit. The carbon steel edge is exposed and so must still be kept as dry and free of acidic materials as possible to prevent rusting and discoloration, but the stainless clad for the rest of the knife means that the rest of the knife is like a stainless steel knife and so easy and trouble-free to maintain. This is a beautiful and well-made knife at a truly excellent price, and once you start using a carbon steel knife like this it's hard to go back to a stainless, since it takes a VERY sharp edge so easily and keeps it for so long. And mind you, it's not THAT big a deal to maintain. But do keep in mind that you DO need to care for the knife and of course, like all the knives I sell, do NOT put it in any dishwasher, and wash and dry it as soon as possible after use (don't leave it in a sink, and don't leave it sitting wet/damp for any longer than necessary).
NOTE: these are sharpened mostly on the right-hand side and so are not really suitable for left-hand use.

All knives come in very beautiful textured blue gift boxes emblazoned with red and silver Japanese characters.

Overall, a great value in a unique, beautiful and very high performance knife -- highly recommended!!
