Supply disruptions at the factory have meant that they are simply not able to produce sufficient quantity, and my customers have been transitioning to Misono over the past few years, so I haven't really pushed... in my opinion, and that of my serious home and professional chef users who have both knives, the Misono (especially the UX10 series) represent a superior value, with better and MUCH stronger edges -- the Misono knives do NOT have the cracking/chipping problem that has always plagued Hattori, which have tendency to be fragile and brittle. Beauty and performance. That's what these are all about. Maybe you've seen some the Kershaw Shun knives used by Alton Brown on his FoodTV show Good Eats? Well these are similar layered steel, but are even more sexy (in my opinion). These Hattori knives feature a VG10 core cutting edge forged with a 63-layer nickel Damascus-look pattern-welded steel blade which is strong, sharp, and has an amazing layered look. The blades are hand engraved with the Ichiro Hattori name in Japanese Kanji characters and permanently welded with stainless steel bolsters. Real Japanese knives that I import direct from Japan, and absolutely superb in every aspect; truly beautiful. The fit and finish of the blades and handles are top-notch, with smooth edges and lines everywhere, and stunning high-polish lacquered handles that really make these stand out from the competition (which usually have plain black handles). The blades are thin and honed to a fine super-sharp edge that can still be easily maintained with standard maintenance tools (steels, stones, etc.). If you're thinking of a Mac or Shun or other budget Japanese or Japanese-like knife, definitely consider one of these instead.

Important Note: these knives are very sharp, and have very thin and delicate finely honed edges, made of very hard steel. As such, they are designed for precision work, and must not be used on hard materials such as pumpkin or pineapple, which can cause the blade to chip or crack, and this is not covered under any warranty, as it is in the nature of such a knife to be more brittle (it's the tradeoff for extremely sharp, thin and hard blades).
SPECIAL INSTRUCTIONS FOR CARE AND USE, FROM THE JAPANESE KNIFE MANUFACTURER:
- Before starting to use this knife for the first time, please wash it to remove any residue.
- This is an extremely sharp knife. Please use special care when using and storing it.
- This knife is intended for cutting and slicing meat, bread and vegetables. Please do not use it to cut bone or frozen foods, hard foods such as pumpkin or pineapple, which have a hard surface. Such use may result in chipping or cracking of the knife edge. Chipping/cracking are not covered under warranty.
- Unlike German-made knives, Japanese knife blades are ground to a thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
- Please do not put this knife in the dishwasher: wash by hand, dry, and store.
- Please do not leave this knife in water for a long time.
- After using, please wash your knife and keep it clean and dry.
- With proper care, this knife will serve for a long time. We recommend to re-sharpen this knife using Japanese whetstones when it gets dull.
- One-year limited manufacturer’s warranty against manufacturing defects (not chips, cracks, or damage due to misuse, dishwasher or dropping).
