Add this to your EdgePro Apex kit if you want a superfine/polished edge, as is popular with many Japanese knives. Not normally used with knives that have a softer metal (the edge will just be too weak) or with knives where you want more "bite" (like boning knives). Comes pre-mounted on an aluminum plate ready for use in your Edge Pro Apex system. This is equivalent to about a 3000 grit in the Japanese system.

Note: this is a new stone -- it is to replace the 800 grit stone (they were having supply problems with the 800 grit stone... functionally they're basically the same).
