I'm usually wary of manual "drag through" sharpeners, but this one has been getting great reviews and so I decided to carry it. Cook's Illustrated magazine gave it a great review, so that's usually a good indication that it's a good product and worth owning. Note that this is the same as the regular #464 Pronto, but the angles are better for Japanese knives, or any other knife you have with a finer lower angle edge (closer to 15 degrees vs. the 20-25 degrees common with German knives).
Here's what the manufacturer says:
In just seconds, you can apply a durable Asian edge to your cutlery. The Chef’sChoice® Pronto™ Asian Model 463 is the fastest two-stage manual Santoku and Asian Style knife sharpener on the market today. Quick, affordable and easy to use, it puts a 15° razor-sharp, stronger, more durable arch-shape edge on straight edge and serrated Santoku and other double-bevel Asian style knives.
The Pronto’s Criss-Cross™ technology uses 100% diamond abrasive wheels that sharpen simultaneously “into” and “out of” the knife edge for a superior burr-free edge with lots of bite. Compact, easy to use and quiet, the Model 463 can be conveniently stored in a drawer. It features a “Soft Touch” handle for an easy, secure grip. Made in the U.S.A. |
