This is the ultimate pan for the serious amateur or professional pastry chef. For making candy, cooking sugar for making caramel or any other cooked-sugar confection (Italian meringue, crème brûlée, caramel, sugar artistry, etc.) unlined copper is by far the best tool, as it conducts heat VERY fast and evenly (so the sugar cooks to an even temperature). Remember, this pot is unlined (it's very heavy, solid copper all the way through, even the handle), and will discolour (and react with acidic ingredients), so you must wash and dry and care for it properly. It is not designed for everyday use, it is a specialty item for pastry/candymaking.

There's nothing like copper for superior heat conductivity and even heat distribution. This means that the cookware responds very quickly to changes in heat for maximum cooking control, and hot spots which can scorch foods and cause them to stick are minimized. Copper is 2x more conductive of heat than aluminum and 10x more than stainless steel! Mauviel cookware is very high end, made in France, and with normal care should last a lifetime. Please note that all copper pans will develop tarnish and a natural patina after several uses. This is normal and is part of their character and charm. NEVER put copper cookware in a dishwasher. Wash by hand with warm soapy water, rinse and dry well. You do NOT need to get it shiny, just clean. All copper cookware tarnishes, particularly over high heat. If your cookware turns bluish or dark do not be alarmed -- this is a normal chemical reaction that does not inhibit performance. In pastry school I learned to wash copper pots prior to cooking sugar (making candy/decorations) with a mixture of salt and vinegar, followed by a thorough rinsing and drying. Here is a link I found to a page with some great sugar cooking hints and tips (like having a brush you use ONLY with water for washing down the sides of a pot... I write "WATER ONLY " on my brush handles with a marker.)
